Overly vigorous topworked apples

I have some ten-year-old apple trees that I topworked in the last year or two. On a few of them (the larger semi-dwarfs such as MM106) I am finding the new grafts just want to head to the sky, and am having a hard time building a pedestrian height tree out of them. In retrospect I should have done more summer pruning on them and will work on that more, but I wonder if anyone else has dealt with this issue and has some ideas. I usually don't do any limb bending/tying down but I did a few of those yesterday and am thinking about doing more of them to get the tree out of such an extreme vertical mode. Some of the limbs are already too thick to bend down, they are more than an inch in diameter and were grafted last spring.
