brainstorm a food bank plot, start mid june zone 5

One of our community plot members gave up their plot before even starting it. When she committed in the spring she didn't realize how busy she would get. So being the head of the one-person gardening committee I decided to use the space for a food bank plot. Also a lot of my neighbors are also low income and/or disabled so they can't manage the rigors of their own plot. So I am doing this on my own dime. What can I put in at this time of year and what types do you suggest for reliability and productivity and cheap/frugal to get? I have my own fancy-shmancy stuff in my own plot. I am not looking for fancy, just good bang for the buck. The plots are about 9x9ft. Thanks!

PS for all I know another plot may be released too so I may have two to deal with. Better than letting weeds grow and spread.
