Better to plant garden rows east-west or north-south?

In this area north of Lake Erie, I've been planting rows in north-south direction, but think that each plant may get less sunlight, being shaded by the adjacent plant.

If in an east-west row, each would get better exposure to sunlight.

Especially since, our cultivator being rather wide, we plant rows 40" apart, so only fairly large plants would shade those in adjacent rows.

Has there been research on this issue, and what opinions do you folks have?

Thank you for your advice.
