Artichoke help

So this artichoke was planted late last spring as a transplant from a nursery. It grew slowly, but surely, and here we are almost a year later. The plant got huge, almost 4 feet across and 3 feet tall. The main stem is producing an artichoke as pictured, and some side shoots are producing little artichokes.

My question is when do I harvest? And when do I cut this plant down o the stalk?

It has been in the 70's here, but will soon heat up to highs in the 100's over the summer. I've never grown or harvested artichoke before, so I am a complete newbie.
