Never liked them myself so can't make a personal recommendation ;) but whenever this comes up for discussion on the Cooking and the Harvest forums the variety most often mentioned is Toma Verde.

There was one discussion on Harvest where several folks said "any variety works well" so it's really your choice. Link below lists 3 different varieties used for making salsa plus gives info on how to grow them - you need at least 2 plants for pollination.

One thing about tomatillos I discovered last year - they get leggy, even under a 150 watt HPS just a few inches above them.

I grow tomatillos every year. The only thing I would say is look for the biggest variety you can find. I grew an heirloom variety last year and they were very small, and this made more trouble to harvest and prepare, but good old "Toma Verde" had big fruits.

They do not need to be started quite as early as tomatoes, I find that once they germinate they grow very fast.

Tomatillos are notorious self seeders. Depending on how thoroughly you cultivate, you will find a few volunteer seedlings in your garden each year after having grown them once. You can move the seedlings to where you want them.

You are correct that tomatillos are late to set fruit. Sometimes you wonder if they will set any fruit before the end of the season. Then, all of a sudden, they are loaded. We do have an extended Fall season here, which is an advantage. But I know people who get a harvest off volunteer plants in a less favorable area.

Also remember, you will probably need more than one plant for pollination. I have had this happen two different years, single plants did not fruit for me, but the same variety tomatillo plants fruited if they had other tomatillo plants nearby. This might be a variety issue and maybe some varieties can produce fruit on their own?

Ditto on the volunteers. I had a lot of volunteers last year (I yanked them out). I found that the green stink bugs really attack tomatillo plants, and then go on to raise havoc on the other plants in my garden. Also, unlike tomatoes, the taste of home grown tomatillos was not better than store bought, at least to our taste. For these reasons I will not be growing them again, since I have limited space in the summer garden, (and a great fear of the green stinkbugs AKA Nezara viridula).
