Petalique's post inspired me to share this amazing recipe that I got from my yoga teacher. They are absolutely delicious and a great source of fiber. I eat them every day, and my digestion has never been this good!

Recipe for Superfood Seed Crackers

Ingredients

Pumpkin seeds — 2 tbsp

Sunflower seeds — 2 tbsp

Flaxseeds — 1½ tbsp

Sesame seeds — 1½ tbsp

Psyllium husk — 1 tbsp (level)

Salt & spices — to taste

I like a pinch of salt, plus Paprika, Cumin and Onion powder, but you can use any spices. I use ½ to 1 teaspoon each.

How to make

  1. Mix all dry ingredients in a bowl.
  2. Gradually pour in 1/3 to 1/2 cup boiling water, stirring well.
  3. ⚠️ Add water slowly and watch the texture — the dough should be thick and slightly sticky, but not watery, so it doesn’t stick to the parchment. Also, let it sit for a few minutes so the psyllium thickens. You may need to add a tiny bit more water.
  4. Oven heated to 300°F.
  5. Spread the mixture onto parchment paper lined pan, about ⅛–¼ inch thick. Smooth with a spoon.
  6. It will bake for a total of 50–60 minutes.
  7. After 25–30 minutes, take it out, cut into pieces, and return to the oven.
  8. Let cool completely — they’ll crisp even more as they cool.

The entire batch contains about 15 grams of fiber, 13.5 grams of protein and 28 grams of fat.
