Ground meat on the menu

When it comes to stuff like hamburgers, meatloaf, meatballs, chili, lasagna, spaghetti sauce, hamburger helper, and other ground meat applications, I always use ground chuck, or a chuck/pork mix.

I've learned that the quality of the beef makes a big difference, and I'm now a bonafide burger snob. I wish I wasn't, this costs a lot of $$. (not quite snobby enough to grind my own.....yet. Stay tuned).

I realize that a lot of folks use ground chicken and/or turkey for such recipes. I'd like to know what and why one chooses these alternatives.

Would it be for health reasons?

Environmental?

Do they taste better? Lighter maybe? Less fat and calories?

What is your method operandi?
