I see Trader Joe's contains cocoa butter, but am unsure whether they are a seasonal product during the Christmas season. I have a terrible time getting white chips to melt and not turn into a seized mess. A little coconut oil helps some. I will look for TJ's, I have better luck with white chocolate baking bars...even Baker's works better than chips for me and tastes fine.

I just use the baking bars. Just break it up and match weight for weight

I just use regular chocolate that you would eat. White chocolate needs to be melted more slowly at lower temperatures than milk or dark chocolate.

Chocolate chips are not designed to melt, they have a coating on them. I am sure you can find a bar or chunk of white chocolate that will suit your purposes mcuh better.

That's a puzzling comment from Marigene^ - I melt chocolate chips often to make bark, ganache or glaze.

And I do know that there's a difference in chocolates for confectionery - the ones made from cocoa butter have a lower melting point and require tempering for certain things, while the ones made with vegetable oils/shortenings do not.

Can you buy bars of cooking chocolate?

Absolutely. They're labelled for baking, but you can use them in savory dishes, too. Some are entirely unsweetened. There are bars in all the colors and in several different levels of cocoa butter for the dark chocolate. I haven't seen that for white, blond or ruby. You can also buy baking bars of milk chocolate, but I haven't used them and don't know the difference off hand, so looked it up: It has more cocoa butter, less sugar and the flavor might be balanced differently, according to Google. The bars are usually 4oz. or 8oz.
