Have you baked latkes?

My mom has a great latke recipe with potatoes, carrot, zukes, and parsley. She can't have deep fried food so we always do it with a scant amount of oil.


Well, I'm feeling lazy this year and don't want the putchkey (as she would say) of all the pans, batches, fying. I want to try baking them instead. We are more than okay with them not being overly crisp, overly fried.


Curious if you have baked latkes before and how you did it. What heat, lined the pan, oiled the pan, for how long you baked them. I have seen various methods on insta and online recipes.
