Comments (15)Here's the one I use: Navy Bean Soup From Food Network Kitchens 1 lb navy beans, picked over, rinsed and drained 10 sprigs parsley 2 sprigs fresh thyme 1 bay leaf 2 large smoked ham hocks, about 1-1/2 lb 1 medium onion, coarsely chopped 1 clove garlic, coarsely chopped 8 c cold water 1 medium carrot, coarsely chopped Kosher salt and fresh ground pepper Butter for garnish Place beans in a large saucepan and cover with cold water by about 2 inches. Bring to a boil and lower the heat to simmer. Cook for 5 minutes, remove from heat, cover and let sit for one hour. Drain and reserve. Tie parsley, thyme and bay leaf together with kitchen twine. In large soup pot or dutch oven, combine the beans, herb bundle, hocks, onions and garlic with the water. Bring to a boil, cover and adjust the heat so that the soup cooks at a gentle simmer. Cook until the beans and hocks are completely tender, about 1-1/2 hours. Turn off heat and remove hocks. Cool slightly. Remove meat from hocks, discarding the bones, fat and skin. Cut meat into small cubes. Remove herb bundle from soup and discard. Puree about 3 cups of the beans with some of the liquid in a blender. (For a smooth soup, you may puree all the beans). Stir the puree and diced meat into the soup. Heat the soup and adjust seasoning as needed with salt & pepper. Ladle into heated bowls, place a small pat of butter on top of each bowl of soup, serve. FRESHLY GRATED PARMESAN, PLUS EXTRA FOR GARNISH SALT & FRESHLY GROUND BLACK PEPPER TO MAKE THE MEATBALLS: STIR THE FIRST 6 INGREDIENTS IN A LARGE BOWL TO BLEND. STIR IN THE CHEESE, BEEF AND PORK. USING 1-1/2 TSPS. FOR EACH, SHAPE THE MEAT MIX INTO 1 INCH DIAMETER MEATBALLS. PLACE ON BAKING SHEET. TO MAKE THE SOUP: BRING THE BROTH TO A BOIL IN A LARGE POT OVER MEDIUM-HIGH HEAT. ADD THE MEATBALLS AND CURLEY ENDIVE AND SIMMER UNTIL THE MEATBALLS ARE COOKED THROUGH AND THE CURLY ENDIVE IS TENDER, ABOUT 8 MINUTES. WHISK THE EGGS AND CHEESE IN A MEDIUM BOWL TO BLEND. Comments (33)In his defense, he has very bad digestion--ulcerative colitis, so I think he is always worried he is going to aggravate it/have a flare up. But then he limits himself so much food-wise that then he binges on something. Like when he was bragging that he didn't salt his food or like salty foods, I pointed out that the crackers, breads, boxed meals, ham and salami and canned soups he eats are more loaded with salt than any amount you would get from a casual sprinkling from the salt shaker. He just got mad at me and said, "I don't want to argue about it, I'm just saying I don't eat salt." I've tried for DECADES to get him to create some healthy eating habits for himself. It will never work, better and smarter people than me have tried too. But cooking for him is sure a roller coaster ride. Some of his lady friends and neighbors tried cooking for him right after mom died, but they soon gave up! I just do what I can, try to detach, as long as he's not wasting away not eating, there's not much I can do about the quality of what he eats. Comments (61)Rosemary is an easy to grow herb, evergreen in warm climates. It's mainly used for fragrance and cooking with meat/beef/pork. There are two versions grown in my climate - the upright version we use for herbs and the prostrate version used for landscaping and erosion control. Unfortunately, the landscape shrub gets very, very large and attracts a LOT of bees. Since the vast majority seem to be planted around mailboxes, I'm sure mail deliverers would like to see them outlawed and eradicated, lol.
