I'm sleep deprived. 1am DH got up to use the bathroom and accidentally locked Aspen IN the bathroom. Ivan started SCREAMING BLOODY MURDER. Aspen sounded like he was in the far distance....mewing softly. ALL haites was breaking loose.....I asked DH what was going on, he said "they're playing", he was going back to sleep.....finally figured out what was going on...by then I was very PO'D....such drama.....ha ha I'm thankful no kitty cats were injured. ha ha It sounded like a murder.....♥

^^^Thank you, eld6161. I typically slice the eggplant, place them on paper towels to absorb some of the moisture in the eggplant. Afterwards, salt, pepper, garlic them, dip in bread crumbs or panko and pan fry. My sister makes her own sauce, so I always have it on hand. Put some of her sauce in the baking pan, arrange the eggplant, sauce on top with grated mozzarella and bake. This one was exceptionally good, as I picked the eggplant when it was fairly small, so the finished product was a winner.
