Lettuce? ... Bread?

Here's a story for you about cooking but not a meal...

I had a gallon bag of some varieties of washed and trimmed curly lettuce. It had been in my produce drawer, but it was puffy and too close to the top, and didn't quite freeze--there was a tiny bit of ice from the washing, but the lettuce itself wasn't damaged. It was what was left after several meals' salads, but I got tired of looking at it, and it was almost in stasis at that not quite freezing. It was perfect. How can one throw away perfectly good food? It's not like one is counting on lettuce for vitamins that might not last.

Well, those who know me know I'll liquify vegetables to replace the water in bread. Lettuce is really just crunchy water. So I put the lettuce in the food processor. I should have used the Vita-mix, which liquifies, but that would have been a lot more effort. Then I looked at my pile of scallions. They'd been sneaking in weekly in the CSA and I wasn't using them up fast enough. One bunch went to a minion, one was sad and went to compost, and half a bunch went into the FP with the lettuce. The other half was sliced finely, and mixed in. I also added some Penzey's Florida Seasoned Pepper, which has alliums and citric acid.

The rise in the bowl was great, but the shaped rise didn't have sufficient legs to hold up the lettuce, so it rose out, rather than up. No biggie. It's delicious!!
