I asked about her many months ago here but got no reply. I miss hearing her common sense comments.

That looks a bit like pecan pie! I would also want to make those, although I no longer get pecans from my family in Texas. Perhaps I can talk my brother there into sending me some, but we don't communicate with each other that often.

Mxk, I found the recipe from an old thread and copied. I think I need to make this, too!

Pecan Pie Bars

3 C. A. P. flour, 2 C. sugar, divided, 1/4 tsp. salt, 1 C. (2 sticks unsalted butter + 3 T., 5 eggs lightly beaten, 1 1/2 C. light or dark corn syrup, 1 1/2 tsp. vanilla, 3 C. chopped pecans.

Preheat oven 350. Grease bottom and sides 12 x 18" pan and line with parchment paper. (Do not grease parchment paper) In large bowl, combine flour, 1/2 C. sugar and salt. With pastry blender, cut in 1 C. butter until mixture resembles coarse crumbs. Press firmly and evenly in pan. Bake 15 - 20 min. In a large bowl, mix together eggs, corn syrup, 1 1/2 C. sugar, 3 T. melted butter and vanilla. Stir in pecans. Spread over hot crust and bake 25 - 27 min. or until set. Cool completely and cut into bars. (I use a combination of half dark and half light corn syrup.) I cut them in smallish bars because they are rich....you can always go back for seconds. Can be frozen.

I often wondered what happened to the bicycle lady. Are you still an avid cycler?

I mostly read here but I remember your posts about playing golf, sharing recipes and hearing about Georgy. It is good to "see" that you are well and enjoying life. Please do come back more often.

Georgiesmom -- I'm very sorry to read of your loss. My DH and I are 'of an age' too, and I have thought about what a huge hole there is after so many years together. You sound upbeat and active despite this sad twist to life. We can always use more of that. I hope you'll come back to add balance.

Moni -- We'd love to hear how life is going for you, your kids, your grands. Have you done some long rides this year? Got some planned?

It made me so very happy to see your post last night, Georgiesmom! People leave and I find it sad, especially kind and interesting posters like you. Georgy'smom thanks for the long update. I LOVE the pecan bars, but probably shouldn't make them again... it's too hard to quit after one piece. :)

Like you, I felt the need to leave because of how the forum had changed.

I kept in touch with Hayjud, and saw her about 4 month before the passed. Still visit with her husband on the phone ever now and then.

I finally met the lovely Kathy G in MI in who helped me and Mel with a parking space in Missoula eons ago. I visited her last summer after riding the Erie Canal Ride in New York.

I still bicycle, but no LONG self contained tours anymore. My knees got to the point, I had to decide to quit or.... I was wearing knee sleeves even in the HOT Oklahoma summers. I got an E-bike (March 2022) rather than quitting, and have 9993 miles on it right now. Will change that during today's ride.

Thank you everyone that posted on mine... and thanks Bluebell I guess for posting the recipe you beat me to it. I love life, and try to stay busy. Celebrated my 70th birthday with my grand-kids at Palo Duro Canyon hiking to "the lighthouse". They are fine, Allison is 15 and driving with a learners permit.

Georgysmom thanks so much for the long update. Sorry to find out, you live the solo life too now, but without having planned it. Keep busy dear lady, it beats boredom.

I'm so glad to hear from both of you! Moni, those Pecan Pie Bars look scrumptious, which is probably why I shouldn't make them. I love pecan pie way too much and try to stay away from it. Georgysmom, I'm so sorry about the loss of your DH. Nobody knows what it's like to lose your other half, unless they've been there like we have. It's a loss like no other. I'm glad you have friends and activities to help you.
