If you need a gluten-free pancake...

My sister found this recipe somewhere unknown on FB. I tried it yesterday -- exactly as written (that might be a first for me :) They were easy to make and since they're naturally gluten-free, I figured I'd post the recipe. We liked them w/ butter and maple syrup.


Cottage Cheese Banana Oatmeal Pancakes


1/2 cup rolled oats

1/2 cup cottage cheese

1 ripe banana, mashed

2 large eggs

1/2 teaspoon vanilla extract

1/2 teaspoon baking powder

1/4 teaspoon cinnamon

Pinch of salt


Cooking spray or butter for greasing the pan


Instructions:


In a blender, combine oats, cottage cheese, banana, eggs, vanilla extract, baking powder, cinnamon, and salt. Blend until smooth.


Heat a non-stick skillet over medium heat and lightly grease with cooking spray or butter.

Pour small amounts of the batter into the skillet to form pancakes. Cook for 2-3 minutes on each side, until bubbles form on the surface and the edges look set, then flip and cook for another 2 minutes.


Serve warm with your favorite toppings such as fresh fruit, a drizzle of honey, or maple syrup.

I think I got around 15 small (2.5") pancakes, so I'd call this a recipe that makes 4-5 servings.
