Meatless brunch?

I'm thinking of making my mother's baked ”omelette” for a lunchy brunch. There's a tomato salsa that goes over the top. It's rich, but not as rich as a soufflé. With it would be home baked fancy challah (with butter and honey, and maybe jam (sweets season)), a green salad, and maybe some cold vegetables. A fruit pie for dessert (round food season).

I would never have considered this menu even ten years ago, but all the growling bear, hard working menfolk have aged and don't have the same appetites as they used to.

It's not the dozens of cousins, either. Maybe one dozen... Is eggs enough protein? I can't even think of what meat would go. I suppose smoked fish... (I don't have to eat it!)
