Vegan chocolate mousse

I've been charged with bringing a flour and dairy-free dessert to tomorrow's dinner party. It's Mexican themed! I thought it might be a good time to use this recipe, which I've wanted to try:

How crazy would it be to add cinnamon to it? You know, like Mexican chocolate?

I think cinnamon sounds good, but with the sugar rather than maple. If you're concerned that some might not care for it, you can always put it on the side for sprinkling.

ETA: I changed to this one because I had very expensive allergen free chocolate chips ($8.99 for 10 ounces) leftover and he uses chips. It is most excellent. Did add the cinnamon and cayenne.

I would think it would deflate on a defrost as the air would release due to expansion and contraction. Can you just keep it well chilled?

I haven't gotten around to cooking meat in my pressure cooker, but yours looks inspiring. I'll bet I could cook a pot roast with turkey thigh, since DB won't eat beef (although I will). I recently learned that I am supposed to clean the pressure valve after each use, and I'm hoping that will make it work better. The instructions also say to oil the gasket before each use, and I have not been doing that either! I tried microwaving chocolate maybe two times and went back to the double boiler. I will never microwave chocolate again - I like the double boiler so much better. My microwave refuses to die - maybe you could come over and kill it for me so that I could justify getting a new one. I haven't made chocolate mousse in a long time, but I used to use the Joy of Cooking recipe, and it had egg whites as well as cream, but I do not think it had egg yolks. I used to make mousse to use up extra egg whites after making Chocolate Hazelnut Bavarian Cream Pie, which uses a creme Anglaise type of recipe. I use Frangelico in the Bavarian Cream, and I'm thinking you could experiment with adding liqueur to your mousse. You might need to add an egg yolk to the chocolate first to get that to work, however. A touch of Kahlua would give it a nice mocha flavor. I saw this recipe and had all the ingredients so this is dinner tonight. I will report back to give it a rating, but it should be yummy. Salsa Chicken Casserole Ingredients 1 cup uncooked rice 1 cup frozen corn kernels (thawed) 1 (15 oz.) can black beans 1 (16 oz.) jar salsa 1 cup chicken broth ÃÂ½ Tbsp chili powder ÃÂ½ tsp oregano 2 large (1.5 lbs.) chicken breasts 1 cup shredded cheddar cheese 2 whole green onions, sliced Instructions Preheat the oven to 375 degrees. Drain and briefly rinse the black beans. Add the dry rice, black beans, corn, salsa, chicken broth, chili powder, and oregano to an 8ÃÂ8 inch casserole dish. Stir until everything is evenly combined. Cut the chicken breasts into three pieces each. Push the chicken pieces down into the rice salsa mixture in the casserole dish. Try to push them down as far into the liquid as theyÃ¢ÂÂll go. Cover the casserole dish tightly with foil. Bake for one hour. Take the casserole dish out of the oven, test the rice with a fork to make sure it is tender. If it is not, recover the dish, return it to the oven, and bake for 10-15 minutes more. When the rice is tender, sprinkle the cheese over top and return the casserole to the oven for a few minutes, or until the cheese has melted. Maire Cate, I lied! It was The Kitchn, NOT the Test Kitchen recipe! I've used so many recipes for turkey from the Test Kitchen (am a subscriber to the site now and to Cooks Illustrated for years prior) that I automatically wrote test kitchen, sorry!! The recipe I used is linked below, it is both easier and tastier than the test kitchen methods I have used (brining, roasting on a bed of veggies, roasting for just a few hours, etc.) The Kitchn method is absolutely the easiest one I have ever used, and one of the best, if not the best. I had a fresh turkey of almost 15 pounds for ten meat eaters. It was rinsed inside and out, giblets and neck removed from cavity (the former in a bag, thankfully), and dried, then sprinkled all over with salt and coarse ground pepper. No stuffing was put in the turkey. The oven was preheated to 450. I poured two cups of Swanson's chicken broth in the bottom of a roasting pan with deep ridges on the bottom and set the turkey in breast up. I untied the legs per instructions. The bird went in the oven on the next to lowest rack setting and temp immediately turned down to 350 degrees. After an hour I basted it with the juices and tented the breast, which was already a beautiful golden brown. You are supposed to take the turkey out and close the oven door when basting, so I did that and basted it two more times about an hour apart. The turkey was ready after 16 min. per pound, I was timing it but there was also a pop up timer in the bird as well, and I used a meat thermometer to make sure it was done. I took the bird out and it rested for nearly an hour while the sides heated up and we had our first course. My SIL's husband (she is my brother's widow) carved and the meat--- every bit of it---- was moist and flavorful and delicious! Best of all, the pan drippings made fabulous gravy, which I made by combining unsalted butter and flour in a large, straight-sided skillet into a roux that I browned a bit instead of leaving white. I used it to thicken the pan juices (which already included broth) by adding the broth to the skillet. I had about three cups of broth/drippings, which contained rendered fat, so I made more roux than I would have for liquid without fats. After thickening the gravy I added about four ounces of half and half and two of those small containers of Knorr concentrated, home style chicken broth. They are about 2" x 1.5" and come in a four pack. This method has to be tweaked on site for the amount of fat in the drippings but makes absolutely delicious gravy. The meal WAS wildly successful, thank heavens, and we did not have a lot of turkey leftover as our young men (ages 13, 16, 22, and 25) ate like there was no tomorrow :-). But there will be enough leftovers for HK to make a turkey pie or two for the coming week, unless we eat it all in open faced sandwiches with that fabulous gravy before the day is out! I could do that. Sounds good, anything that can add flavor. That's why I wanted to add cinnamon.

I had to double up on the sugar and cocoa to get the mousse to the right level. I'm trying to match non-vegan mousse for people who aren't in love with that lifestyle yet. Both were recently diagnosed with whatever issues each has and addicted to sugar (as am I!) so haven't quite come over to the other side yet. Their big thought for non flour/wheat is fruit that really didn't appeal to them. Now fruit, I will eat. Hope this helps them feel less helpless.

Extra kudos to you for helping them see the hope.

For more gluten free non-dairy, check Passover cookbooks. The treats are mostly parve (neither dairy nor meat), though many do have eggs, even a lot of eggs, but can be adapted to work with egg replacer or aquafaba, with some trial and error. I haven't done a lot of vegan research since one of the younglinges flirted with it some years back. There were some great blogs, and surely there will be more now.

I hope they love the mousse!

They loved it! Said it was "fancy", so I shall assume they did not feel like they were settling in any way. 😊

They both have fibromyalgia, and it's milk and wheat they can't have. So not really vegan, but halfway there. Vegan ingredients and recipes just makes it easier.

That sounds really good! I love tofu and this would be a great way to use it. I was surprised the recipe didn't stress that some sugar is not vegan...experienced vegans would know; beginners and non-vegans searching for vegan recipes to accommodate friends might not. I know when I first started looking for vegan recipes, I was unaware that sugar isn't always vegan. Glad it was a hit!

I hadn't heard that about refined sugar, so looked it up. It's bone char that's used as a filter in the refining process. Indeed, not vegan, but surprisingly, does not affect the kosher status. And the article I read said (my interpretation) that cleaned, marrow-free non-kosher bones can be used as tools for handling kosher food. So this is their description of the use of bone char in sugar refining: ”Incinerated animal bones (known as bone char) are used as a filtering aid for sugar to remove unwanted color. Since the bones are completely burned, they are not edible even for a dog (aino ro’ui liachilas kelev), and no longer have a non-kosher status. In truth, non-kosher animal bones can be used for filtering even if they have not been burnt. “

I don't think vegans care about the same things as Kosher, since it wouldn't matter what state the animal product are in, just that they came from animals. I guess organic sugar is always vegan and either cane or beet, but I can never remember which. I always buy organic anyway, so I don't worry.

Yeah, **I** was wondering about kosher. It's not for vegans. I'd never heard of it before. I know vegans who haven't as well, and kind of live on refined sugar. Beet sugar does not require the same kind of refining. Raw sugar should be fine, as well.
