reducing sugar in rhubarb recipe: alters ratio?

I'm making rhubarb recipes. The rhubarb I'm growing this year seems to be less tart. Another local gardener mentioned the same thing.


I like my rhubarb baked items tart anyway. It seems like a lot of rhubarb recipes compensate by having the dough more sweet.


If I just reduce the sugar does it change the proportions for baking powder, salt, baking soda, etc?


With the muffins I made yesterday, I doubled the rhubarb to 2 cups instead of 1 (for a dozen muffin recipe). The dough in between was still too sweet.


They hardly raised at all, but were still tasty. I don't know if it was the weight of the extra rhubarb, or if I need to buy fresh baking powder. I'll test mine. Do I need more leavening if adding more fruit to a recipe?
