Advice for making odd stuff gel (like Jell-o)?

I'm sure this must be inspired by John's unculinary adventures. I'd been thinking, "Where did the beets go?" They were actually where (in the fridge) I thought they should be, but had been shrouded by other things. They're sort of pickled with onions, and produced a lot of goo. There's nothing bad growing in them, but I didn't open, sniff, taste. Still,, while they were a great experiment, and more iterations will come at some point, I need to do something with them now, and thought cutting it all small, and gel the whole thing with the goo.


I've made Jell-o a couple of times, and a couple of Jell-o salads. I have both powdered and sheet plain gelatin for baking and other non-jello things. So... Can I make some kind of jello-y thing? I don't know if I can find my pH strips, but there's a pickly amount of vinegar. I know that would need more gelatin, but would it just be too much to reasonably make gel? There are recipes out there for cucumber pickle Jell-o, but I don't know if they're not that acidic. I would heat the goo to be the "water".


If you think it'll work, any suggestions for how much gelatin to use? I think I have about 3 cups of beet pickle and goo. It's okay if it's jiggler dense or regular, but I do want to be able to make it shallow in a pan and cut and serve it, though I have some silicone, small piece molds that would work if needed. I thought it would go well with dinner on the 4th. If it works.


Do you think it would be a good idea to add pepper?


I know exactly what I want it to be, just not at all how to get it there... Thank-you for helping!
