Sub coconut sugar in simple syrup for melomakoma cookies

I tried to post this a few minutes ago, and it did not work, and so I will try again without links.

I wanted to start making some melomakoma cookies today using a recipe by Akis Petretzikis, as it looks like the best one I've seen, but it requires the honey/sugar syrup to be made first so that it can cool. Hot cookies are then dipped in the cold (never hot) syrup for 15 to 20 seconds and then drizzled with honey (optional) and sprinkled with finely chopped walnuts.

I only have a couple of tablespoons of white sugar in my pantry, but I have a large quantity of coconut sugar and other raw sugars. Will these work for making a simple syrup, or do I need to wait until I have gone to the store and restocked white sugar? I almost never use white sugar, but I am fine with stocking it for the rare occasion that I need. I do always have powdered sugar, but of course I would never use that to make syrup.
