Comments (11)I was curious so looked it up. Costco chickens arrive to them pre-brined (brine being the "added solution) from the supplier. The ingredients include sodium phosphate and a lot of gums and starches (variable in their exact nature). Too much phosphorous can be bad for you, but if you mostly get your phosphorous from whole foods (what's a synonym of that which isn't the name of a store?), you're fine. In general, for mass produced foods, the ingredients label for Costco chicken isn't that scary. :) I don't know if the "chicken goo" that pkramer spoke is more about brine gelling because of the gums in it, but actual roasted chicken juice, sans brine, does gel in the fridge. It pretty well melts at room temperature, but only needs to be cool to gel. It's the collagen. I presume from the cartilage. Beef bones will also give you gelling juice. Comments (5)I would not worry much about that sell by date on the carton. If you are concerned, you can keep it in the fridge, unopened. Not sure that it woudl be any real advantage, though. It will be fine for a good time yet. I keep my home canned tomatoes in the fridge in the garage. It is a place to keep them and it keeps them from freezing in the winter. We bought this one without a freezer because we used to buy so much fresh produce and used to keep a lot more food around. It may or may not be of an advantage, but is offers a good storage for our situation. Comments (40)Congratulations, nancyjane, now you've spoiled yourself and will have to continue roasting chickens! I raise my own chickens and process them for the freezer, so I always have a supply available. A couple of mine got a....little....um....big. Like 8 pounds worth of big, LOL. I brined one, stuffed it with fresh herbs from the garden and roasted it in an open pan at 450F. It took about an hour and a half and it turned out really well, one of the best I've made. I don't eat chicken skin, so crispy didn't matter to me, but everyone else loved it and were impressed with all the crunchy bits while the meat stayed moist. Obviously, I got more than one meal from that bird. We had the traditional roast chicken/mashed potatoes/green vegetable meal, then had chicken sandwiches. I made a batch of chicken enchiladas and still had enough chicken to make a batch of chicken and rice soup. The carcass became stock. That chicken definitely did not go to waste. I still have three whole chickens in the freezer, along with packages of "parts", so I see a roast chicken in my very near future, thanks to a reminder from nancyjane. Annie...See More- 2 years ago
