Using leftover sour cream dip

Some people don't like guacamole, so we bring "dip," too. I was going to try a recipe for a Moroccan style carrot salad/dip I've been wanting to try, but I ran out of oomph. I always have in my fridge a sealed tub of Knudsen's Hampshire Sour Cream, which is local, though maybe the company that now owns it has taken it to other markets. It's just cream without other ingredients, thick, tangy and delicious. For dip, I pour off any separated whey. I use the whole tub (pint?) because less looks chintzy even though I knew they'd only eat half, and they did.

Not wanting to make boring old onion dip, but needing it to be close enough not to be a shock, I looked around for inspiration, and got it from a sample packet of Penzey's Sandwich Sprinkle (coarse salt, garlic, black pepper, basil, oregano, rosemary, thyme and marjoram ), somewhere between Simon and Garfunkel and pizza. Great! Dip needs salt (I can't imagine sprinkling this stuff on a sandwich, though). I added more marjoram (I over bought marjoram, so am trying to use it for other things). Also a bunch of ground celery seed and ground coriander. Fines Herbs (chervil, minced parsley flakes, chopped chives and French tarragon). And for some extra pow, Frontier Co-op Garlic 'N Herb Seasoning (Sesame Seed, Black Pepper, Garlic, Green Onion, Lemon Peel, Citric Acid).

I have to tell you: The leftovers are great straight on a fork! Also, spread in a half-pita instead of mayo for a sandwich. And on pasta with my meat and vegetable ragout. I'm going to be sad when it's all gone!
