Pumpkin latkes?

Do you think pumpkin latkes sound good?


I've been getting sugar pie pumpkins from the farm--though one is a different kind of little pumpkin. I was thinking if I peeled one, and put it through the FP grater it could be a latke. I can't decide between sage and tarragon. I find sage and pumpkin boring, but it fries well. I worry that the tarragon is too delicate. Either way, I'm thinking scallions, both the white and the green.


Or, I could go the opposite direction with leeks or fennel
