Saturday Market update
Comments (27)Just got home from today's market; sold all my loaves of bread and half of the Monkey Bread -- so I called it a day at 11:30 a.m. I probably won't make the Monkey Bread again as it does not do as well in smaller pans. Maybe next week I'll make some of Cindy Mac's cinnamon buns. It's interesting having some regular customers come back each week: one new friend that I made got there late today and the bread she wanted to buy was sold out....so she bought the remaining loaf (sourdough) anyway. Now that's a good customer. I lost a sale when I had to decline taking a check. I've had some bad experiences with checks on my Etsy sells so I've just learned to say "sorry, no." The customer understood and said she would see me next week. I just decided on the spot that I would not take a check for a $4 loaf of bread. It is cool and cloudy here today, so not too much early traffic at the market. More vendors today too; I had to squeeze in next to Sweet Teenager Artist and her mom. Chicken Lady was there and sold out of her eggs. And I made a new friend in Mavis who has an alteration shop and loves to sew as much as I do. Met a nice young fellow, a structural engineer out of work, who is growing winter squash, gourds, and watermelon - I now I have to find room in the fridge for a small "Sweet Crimson." Comments (1)My experience with the auto programs is that they do include a prove interval. The auto programs can only be modified for browness level but not the steps that they are using. I have used their baguette function and put them in the CSO right after shaping/slashing and a very short rest. It works quite well. It appears that Miele has made major modifications to their user manual with the new 7000 series. My 6000 series included a table for baking serveral type of bread using the Combi Steam mode. It detailed out steps that you can use as a starting point for you own programs. I am traveling and will post it when I get home. Google “miele combi steam focaccia“ and you will get several youtube videos on making focaccia in a CSO and links to recipes. Comments (14)I haven't been very happy with the flavor profile when I overtop my focaccia. I think it does best as an herbed flat bread. Can always top with some type of spread. I've done the classic spinach artichoke dip lower fat with adding some pureed beans for some of the cream cheese and sour cream. I also have topped it with red peppers, both roasted and unroasted. For the color. You could also do little crudite skewers with the mozz cheese and peppers and maybe an olive or bit of something out of a jarred mixed marinated pickle jar. If it were me I'd steam some broccoli and marinate that. Comments (8)It has been devatating in the NorthEast with all the rain. Another a few nights ago. Could not sleep being 'water-boarded' all night with a slow drip from a skylight over our bed. Does not happen often unless it is a heavy down pour in a certain wind direction. Nothing like those suffering floods. A couple weeks ago our hot water heater exploded flooding the basement. Still nothing compared to having 3+feet of water in your home and no power. We canceled holiday travel plans for many reasons. Under the sink started a small drip leak, then a heavy misting spray. Shut off the water to the reverse osmosis filtered water. I caught it just in time. Just a quart of water on the kitchen floor. Had we been out of town through the NewYear it would have flooded the entire kitchen, living room, bedrooms, etc. Probably a couple gallons an hour. (when they repaired the filter system, the water pressure loosened a important valve). They repaired at no cost under their warranty. Usually we turn off the water to the whole house when out of town but often forget. Yikes. Not sure colder temps and snow would have been a better senario but we are better prepared for snow.
