Individual vanilla-wafer-as-crust cheesecakes

Why do these little individual cheesecakes always sink? You know the ones, using vanilla wafers for the bottom with cheesecake mixture poured on top, in a regular-size cupcake paper (recipe makes a dozen).

The sinkage is a good area for adding ”toppings” like crumbled cookies, lemon curd or jam, etc. They dome a bit while baking & sometimes crack, but always sink when cooling. Any suggestions for domed-top cheesecakes? Thanks!
