Comments (4)Dcarch You always lead me into trouble. I googled for inverted sugar and found the site listed below. Read about inverted sugar. Chef Eddy's explanation is very clear. Yupp, I can do that. Then I looked at the rest of the site. Many of the recipes look wonderful. Great site. Then I looked at Chef Eddy's book, On Baking. Big bucks. Big mistakes to read the reviews. Big item to go on my MUST LOOK AT before I buy list. I wonder if anyone here has the book. Comments (7)Here is the recipe I use from Joy of Baking. Please note, if it cools to long, it becomes rubbery, so I only let it cool so it's not hot. So, I whip the cream, refrigerate it, and then make the stabilizer. Otherwise it cools too long and becomes rubbery, and you have to heat it and cool it all over again. I have never had a bad texture from it. Sherry STABILIZED WHIPPED CREAM ICING 1 tsp. unflavored gelatin 4 tsp. cold water 1 c. heavy whipping cream (at least 24 hours old and very cold) 1/4 c. confectioners' sugar 1/2 tsp. clear vanilla extract Combine gelatin and cold water in small saucepan. Let stand until thick. Place over low heat, stirring constantly just until gelatin dissolves. Remove from heat and cool slightly. Whip cream, sugar and vanilla until slightly thickened. While beating slowly, gradually add gelatin to whipped cream mixture. Whip at high speed until stiff. Yield: 2 cups Cakes iced with whipped cream must be kept refrigerated. Comments (7)Some folks, like my mom, only make ice cream with a custard base. Mom thinks anything else is not worth eating. I, being the modern, cutting-edge, foodista (that's a joke folks!), have made ice cream with such exotic ingredients as Greek yogurt, eschewing a cooked custard base. Below is a cooked custard recipe from The Kitchn: Basic Custard Ice Cream Base 3 cups dairy (whole milk, heavy cream, or a mix) 1 cup sugar 8 egg yolks pinch of salt 1 teaspoon vanilla (optional) Have a strainer in a bowl ready over an ice bath. Bring the dairy to a simmer in a medium pot over medium-high heat--about 5 minutes. Watch it carefully so it doesn't boil over. Remove from heat as soon as you see bubbles forming and let sit until it's cooled to room temperature--about 10 minutes. Meanwhile, beat the eggs, sugar, and pinch of salt into a thick paste. When the dairy has cooled, stream it in while stirring the egg mixture. Once combined, return everything to the pan and cook over medium-low heat. Stir gently in an "S" shape, being sure to scrape the bottom of the pan. The sauce is ready when it looks silky, has thickened so it coats the back of a wooden spoon, and has reached a temperature of about 170-degrees. Strain it into a bowl set over an ice water bath and stir in the vanilla. When cooled, freeze mixture in an ice cream maker according to the manufacturer's instructions. Comments (17)Freezer bowl must be well FROZEN. One of the first things I did when I arrived at my summer home last week was place the bowl (have the same ice cream maker that was on sale at Kohl's) in the freezer, BUT I had forgotten freezer was turned to low during the off season. My daughter checks the house but doesn't need the freezer. Well after 24 hours I went to make us ice cream; mixing instant chocolate pudding and cup of heavy cream and 2 cups of half and half. Have made this many times it's like a fudgecicle, OOPS! very cold rich chocolate "milk", but I froze the "non ice cream" anyway, did freeze well and tasted great, just not "ice cream". Yesterday with the freezer now turned up and the bowl well frozen I used 1 cup lactose free chocolate milk 1 cup heavy cream and had a very nice soft serve ice cream. Since homemade ice cream made with out alot heavy cream seems to freeze very solid, (something about this type of machine not mixing in a lot of air) I place the ice cream in single serving containers and freeze that way instead of making one large container. There are many recipes on the web for homemade ice cream. If you missplace your booklet from your Crusinart ice cream maker I also found that one on line.
