Not the OP but I'm still on here and a lot of water has gone under the bridge. I had the Wolf DF for about 4.5 years and the cobalt blue enamel came off of the bottom after running the self clean. This has been an issue, if you look at the lawsuits on these ranges built as far back as 2006. Quite a few posters had issues of chipping with as many a three ovens in a row. The all gas versions do not seem to have the issue (no blue interior) although they are mentioned in at least one lawsuit. I like Dacor platforms that were bigger too but the ovens I had were worthless. Mine were with the Discovery controllers at the time, different from some of the other ovens. They have since been bought by Samsung and been through model changes through the years. I though maybe they fixed them but there was recently a poster here that bought a wall oven and returned it quickly because they had issues with it. What type of cooking do you do? The Ilve has a few things that might cause concern for some people. The burners are all underpowered for what most people want now. Ranges like BlueStar and Capital have 22-25K on at least two burners. The Wolf all gas also tops out at 15K and you may have had 15 or 16K on your Dacor range So maybe that works for you. I have 15K on my Wolf DF and it is OK but it is on all burners except one. Many people complain that a griddle with 15K is underpowered so 10.5K would be even less. They also mention that the griddle is stainless so it will not season like rolled steel on Wolf. Stainless by itself is one of the poorest conductors of heat so would heat unevenly unless it has aluminum or copper sandwiched in. The French top is also only 8.5K BTUs compared to 18K on something like BlueStar. Also check out the oven size. Look at the usable rack size. A lot of space is taken up by the warming drawer. Look at the broiler size. This is the manual. I don’t have the Modernist but have the Heritage Pro dual fuel. I’ve had a 30” range and have used it for 20 years with NO PROBLEMS. I love it. Am now remodeling my kitchen and am replacing it with the same range but in a 36” style. I liked the modernist style but have been so happy with the Heritage, that I didn’t feel it was worth with the extra $$ to go to the Midernist - and didn’t need/want all the computerized features. The latter, in my opinion, are just addl things to break, maintain and need updates. When looking for a range like this, the “biggies” IMO are 1) BTU range to go from simmer to high BTU output. 2) usable space in the cavity of the oven (note that Dacor ovens are typically larger than Wolf or Thermador). 3) continuous grates - which make a huge difference for cooking, moving pans around the surface of the range, and - frankly - safety (no tipping pots). Cleaning ease is also something to pay attention to. I’ve liked the Dacor for this as well and regularly use the Clean cycle. Hope this helps.

I wish I could help you more! I recently bought the dacor discovery duel fuel and won't be able to use it till my house closes in September! I too found it hard to find people who had the Discovery line, but I am taking a chance after visiting several appliance stores and talking to a lot of people, oddly they all seemed to vote dacor above wolf.

After my experience with Thermador, I’d recommend avoiding purchasing anything from them at all. I was sucked into the promos they offer (free dishwasher with range purchase and most of the hood paid for when you buy the refrigerator) and picked them over the more expensive Wolf/sub-zero appliances we were debating springing for. So sorry we went with Thermador. I have had issues with every Thermador appliance I got which we are still trying to resolve. The worst is the refrigerator which will not close properly and the door hangs crooked. The installer spent over an hour on the phone with Thermador tech support to walk him through trying to get the door to hang straight and close completely. After so much time they told him there must be an issue with the unit and I need to call customer service. We informed the store we purchased the appliances from we were having issues, and they called Thermador and arranged for them to send a rep a week and a half later, who showed up late and did nothing but take a few pictures and said it’s an installation issue and they won’t fix it. The dual fuel range will not go flush to the wall (the Thermador rep said that’s how it should be), and protrudes much more than I expected from the countertop and cabinets. It is a big range, but the pictures on the website and the display model in the store showed only the door and trim, not the sides of the unit, protruding. As far as cooking, although I like the star burners and find they heat faster than the Dacor I previously had, I am a baker and the oven takes longer than it should to bake and seems to have very uneven heat—the first time I made cookies they came out with one side burnt and the other side hardly baked at all. Plus, the knobs are attached with cheap plastic. One of them fell off in the plumber’s hand when he tested the burners during installation because the plastic was cracked. (The broken knob was the only thing fixed after going around for weeks between the store and Thermador). The dishwasher cleans but it is narrower than the 24” standard cavity it was installed in, so the installation brackets are very visible as well as a gap on each side. We spent a fortune on Thermador “professional” appliances, but they do not look good, and only the burners function better than the 15+ year old Dacor and GE appliances we had pre-reno.
