Perfect Salmon Fillets?

We watched an episode of America's Test Kitchen last night where the chefs used the following technique to grill salmon fillets:


1. Cut the fillet into equal pieces roughly an 1-1/2" wide.

2. Brine the pieces in water, salt, sugar for 15 minutes.

3. Liberally sprinkle the bottom of a COLD fry pan with kosher salt and pepper.

4. Place the fish, skin side down, in the pan and THEN start the fire.

5. Cook on medium flame for 6 to 8 minutes.

6. Flip and repeat for 6 to 8 minutes.


The beauty of the method is that the skinny side of the fillet wasn't overcooked. In fact, the whole piece of fish was perfectly cooked. Uniform color throughout. Heading to the supermarket in a bit to get some salmon and try this out. In the same episode, they compared cooking farm-raised Atlantic salmon to wild salmon. Farm-raised is cooked to 125 degrees, wild to 120 degrees. It's the extra fat in the farm-raised that makes the difference in cooking time and better flavor. Who knew?
