A recipe out of the past.

I got an email from an old friend today and part of what she said: "I have made this many times & just noticed the date you sent it! July 8, 2004!"
She is an excellent cook, and so, if she continues to make this recipe, it must be good. I've added spacing for my own help, and a note about baking the crust first, but other than that it's original.

CHEESECAKE


9” springform pan with graham cracker crust


24 oz. cream cheese, softened

1/2 t salt

1 T vanilla

4 eggs

1 c sugar


2 c sour cream

2 T sugar


First make and bake crust. ALLOW TO COOL


Cream together cream cheese, salt and vanilla. Beat in eggs one at a time. Pour into 9” springform pan with graham cracker crust.


Bake at 350 F 30 - 35 min. Until center is jiggly (firms up when cool.) Remove from oven. Increase oven to 450 F. Combine sour cream and sugar. Spread over top of cake, Bake 5 min. or until set, at 450 F. Cool completely before removing sides from pan. Cover and refrigerate for 24 hours. Top with choice of topping.


GRAHAM CRUST

Pulse 1 1/2 c (12 whole rectangles) graham crackers with 1/3 c butter, melted, and 1/4 c sugar, until combined in food processor. Press firmly over bottom and 2” up sides of 9” springform pan. Bake at 350 F for 10 min.
