I dont think you need quite that much room. The distance needed from wall to faucet will likely be determined by the faucet. The specs should include clearance needed, but require very little space depending on how the handle moves. Most tile for a backsplash is about 1/4" thick, so give yourself a little extra for grout, but still 1/2" should do. Then the width for the faucet itself prolly is 1.5-2", but I have just about 1-1.25" between the faucet and the sink edge. The amount of granite needed in the front may depend on your granite installer. I was strongly advised to have 4" minimum, but have heard others say they went with 3". I guess this is part of the reason some people do bump outs!

It looks like it is the fabricator you should ask about warranty . Just a reminder : You do have a 3cm Caeserstone , not the 2cm one . Even if the groove is 1cm deep , there is a lot of material left with lots of strength . As suggested , if concerns are about the material splitting , which in this case it is highly unlikely , then you can always fill the grooves as much as possible . Another reminder : The sink in question is coming with attaching brackets and maybe in the fabricators experience , they decided it is better to use them in combination with a strong man made stone . Nothing wrong with it , especially with sinks which need prying force to bring them close to the stone . I do not use this system , but I've seen it on many occasions by other fabricators . You should make sure the sink lip is siliconed well to the stone , for preventing future leaks .

Not advised to create a ledge. You physically can, but now you depend on silicon to keep things water tight. If you keep a zero reveal or an overhang, then water is less likely to accumulate on the sink flange (Which is used to create the ledge). The silicone then can stay intact longer, and not be needed as the primary water guard. Often the biggest problem we see with ledge sinks is with the installation. Some issues we have been told is with accessories not fitting. However, this is easily avoidable with two best practices: 1. The fabricator should always follow the template 2. Unless it has a flat rim to snug up to the counter underside, it can not be undermounted. Drop in sinks typically have rolled profile tops, not flat.
