Comments (29)Tonight's dinner was a new one for us, from a magazine cookbook I bought called "Eat to Beat Inflammation" by Better Homes and Gardens. Note: my local grocery almost never has escarole so I made this with baby spinach and chard. You could also use bok choy and just sprinkle dried fennel on it. Or sub two stalks of celery sprinkled with fennel which is what I often do since fennel can be pricey out of season. I also added about 2/3 pre cooked brown rice at the end to mix with the spinach. I special ordered some Lundberg short grain brown rice and we love it. Ingredients: 2 boneless pork chops 1/4 tsp kosher salt 1/4 tsp freshly cracker pepper (Note, I used a steak seasoning that had dried garlic along with the pepper) 2 TBLSP olive oil 1 head escarole, 12 oz which is 4 packed cups. Roughly chop 1 medium fennel bulb (that's too much. I didn't have the bulb part, had already used that so I sauteed the chopped up tops along with some of the leaves. About half were too wilted.) 2 TBLSP shallot minced (2 small shallots or one large) 1 TBLSP white wine vinegar 1/2 cup water (I used chicken broth) 1 TBLSP Dijon mustard Start by sauteeing the fennel and the shallot in a braising pan with the olive oil. I had to add a few splashes of chicken broth towards the end because the shallot was browning too fast. When they are about 2/3 done, add the seasoned pork chops. to the middle of the pan. Cook for 3 min. on medium high, with the cover on. (This is where I had to add some chicken broth to prevent the shallots from scorching) Meanwhile, combine the dressing ingredients (water or chicken broth, vinegar and mustard) Flip the pork chops after three minutes. They should be nicely browned. Add the chopped greens around the edge of the pan and over the flipped chops, and pour the dressing over the spinach. Cover and sautee for about three more minutes. A little less if your chops are thin. Maybe two. At this point, my spinach wasn't quite wilted enough for my taste so I took out the pork chops and set them aside temporarily on a small plate. I added some short grain rice I already had cooked (~2/3 cup) and sauteed the mixture for about a minute more. Popped the pork chops on top of the mixture to take to the table. Served it in a pasta bowl. Very good and filling, although we had a tiche of left over potato salad to go with it. This would pair well with roasted veggies particularly some type of squash. Or corn on the cob or some french bread for sopping up the juices at the bottom of the bowl. Of course this is if you aren't carb averse. If you are, then more greens and no rice. Comments (41)Yes, hubs and I used to walk almost every day back when I lived in a walkable neighborhood. And before that I walked by myself all over the place. And I used to walk a lot for work since I worked at an arboretum. Even my friend who is an inveterate walker commented on how unpleasant it was walking in my neighborhood. I love our lot, and there are many lovely homes on lovely lots, but the in-between parts are not very good. I think this is relatively recent as the neighborhood has gone down considerably in the last ten years, along with most neighborhoods in my home town, outside of the lake properties, which have just sky rocketed. Hubs has taken to driving the dog to a big park on the other side of town, known as the more ritzy neighborhood, and even there he saw homeless people camping out. There is a homeless person apparently now living on the steps of our local library, (It has a portico over the unused back entrance) just below the "Keep Off the Steps" sign . . . sigh. We have homeless shelters and people working on this problem, but it doesn't seem to get better, just worse. We are just off of a major freeway interchange which I think is a big part of it. It's not that I am "too good" to be around homeless people, quite the opposite but who knows with the mental illness and drug problems that accompany so many, and also, it is just sad to see but I have tried referring folks to the local services but they never follow through. So its sad and depressing. Ironically, on the flip side, my home is very conveniently located for driving to shopping places and getting on the interstate . . . I think/hope I will be back at the senior center on the treadmill in the not too distant future . . . Edited to add as a side note, we used to have a huge state home for mentally challenged children and adults that was the major employer in our town. We were known for the "State Home." Lots of sadness and problems there too, only certain people could leave of their own volition, along with folks really trying to help in that situation as well. It closed and we've gone to a smaller, non-mandatory model for care, but that leaves folks unable to fit into that situation either on the streets or often in jail or prison, which is right back where we started only worse . . . It's one of the most confounding problems of our time. Of course like most problems it's going to take a multi-pronged approach to solve. My uncle was in intractable alcoholic and it made my grandmother so sad. She gave him just enough money to keep him housed, but it was a constant battle to keep a roof over his head because he would drink away any offering of help in any realm....See MoreHealthy Lifestyle Progress - Week of 9/10/2023
Comments (18)I felt lousy for over a week, just today feeling pretty much like myself (so far). Tested negative 3x for covid and never had a fever. Just headache, intermittent sort throat, fatigue. This has happened to me for years. I will randomly feel run down, that ”I’m getting sick” feeling without ever getting truly sick with anything diagnosable, usually just for a couple of days. I mentioned it to my PCP a few years ago and some tests were done. All fine. I do tend to run slightly low on B and iron, and when I had long covid a couple of years ago I was borderline low so the dr recommended supplements. I have dropped them since, but I think I'll start again. The iron I have taken is this liquid that tastes like garbage but doesn't bother my stomach. I was getting a little worried about my upcoming trip so figured it couldn’t hurt to add this back into my routine until I leave. Funky, apples are so great right now! I have been having one every day, often with almond butter or as a ”side dish” with my scrambled eggs. I find that they feel more like a treat (and take longer to eat) when I cut them up. Oh, and sometimes sprinkle with cinnamon. Comments (7)@gsciencechick - the program I joined this month refers to "informed" intuitive eating - knowing why you are craving sweets, or not being able to go more than 2 hours between meals without getting hangry so you can fix it. I don't know the exact definition of intuitive eating, but in the end I understood their idea to mean - listen closely to your body, but try to get it to eventually tell you the right thing :) I love the NSVs - looking and feeling good. I travel far to get my hair cut, so usually I only make it a couple times a year - very strange, but that's how it's been working out. Last week I got the BEST haircut, so that's a win for sure. It is great to feel good in your body and your clothes. My travels went ok. Not quite as much exercise as usual, but lots of steps. I wore my jeans for the second time this season and they are not any looser. Thought maybe I was losing some in my waist, I feel less bloated with all of this additional fiber, but no go there. I came back several pounds up as usual, but am down a couple this morning. Trying to get back on track. My schedule is pretty free through the end of the year, so I hope to make some weight lifting progress. Still considering joining a gym as the weather gets cooler. This is the same podcast host we linked last week - but he had another great guest. This one talking about the benefits of walking - not just on physical health, but mental health, problem solving, focus, job performance etc. I found it interesting and motivating. Sometimes it's easy to get caught in the weeds of weight loss, but often it comes down to the basics. The guest was Irish as well - so fun listening! Walking Podcast I live in a very walkable area - to walk my dog or get a stroll in, but I can't walk to the store or to run errands, or to dinner. I would love to live somewhere like that.
