I see the Dr on Wed - to get an 'all clear' and can hopefully move on. Funny, the Witch has been sitting in the shed for a couple of weeks now..DH got her done real fast along with the cats. I was going to put her up this past weekend, but..you know why that didn't happen...lol Hopefully in a few days..as I promised the kids. As far as my Fall decos...I've got most done too. Crock Pot Chicken Enchilada Soup Skinnytaste.com Servings: 6 ⢠Serving Size: 1 1/2 cups + cheese ⢠Old Points: 5 pts ⢠Points+: 7 pts Calories: 260.9 ⢠Fat: 6.6 g ⢠Protein: 25.4 g ⢠Carb: 29.9 g ⢠Fiber: 6.7 g ⢠Sugar: 4.1 g Sodium: 572 mg (without salt) Ingredients: ⢠2 tsp olive oil ⢠1/2 cup onion, chopped ⢠3 cloves garlic, minced ⢠3 cups low sodium fat-free chicken broth ⢠8 oz can tomato sauce ⢠1-2 tsp chipotle chili in adobo sauce (or more to taste) ⢠1/4 cup chopped cilantro (plus more for garnish) ⢠15 oz can black beans, rinsed and drained ⢠14.5 oz can petite diced tomatoes ⢠2 cups frozen corn ⢠1 tsp cumin ⢠1/2 tsp dried oregano ⢠2 8 oz skinless chicken breasts (16 oz total) ⢠1/4 cup chopped scallions, for topping ⢠3/4 cup shredded reduced fat cheddar cheese ⢠fat free sour cream (optional) Tweaks: Substituted thighs for the breasts. Chopped jalepenos instead of canned chipotle, 1/2 the amount of cumin, 1 T. chili powder for a double batch, omitted the oregano because I forgot to add it, added about three carrots, sliced, and tore up 5-6 corn tortillas & tossed them into the bubbling soup. Continued cooking until the tortillas melted away & thickened the soup. Was too lazy to go to the basement & fetch massa out of the refrigerator down there, hence using the tortillas. The soup was kinda' thin, still, and wasn't enough massa flavor to suit me. Next time, I'll use massa instead. Directions: Heat oil in a saucepan over medium-low heat. Add onion and garlic and sauté until soft, 3-4 minutes. Slowly add the chicken broth, tomato sauce and chipotle adobo sauce and bring to a boil. Add cilantro and remove from heat. Pour into crock pot. To the crockpot, add drained beans, diced tomatoes, corn, cumin, oregano and stir.Add the chicken breasts; cover and cook on low heat for 4-6 hours. Remove chicken and shred with two forks. Add chicken back into the soup, adjust salt and cumin to taste. Serve in bowls and top with fat free sour cream, cheese, scallions and cilantro. Comments (13)We had our second football party of the year for the Huskers today. It was an early game (11:30) So had snacks and hardier things for lunch. Chili with toppings loaded potato soup little smokies with bbq sauce Cheese/salsa/hamburger dip spinach dip bacon tomato dip cheese, salami and crackers relish tray banana bread cantalope and watermelon popcorn seasoned oyster crackers candy corn with spanish peanuts pickles wrapped with cream cheese and dried beef various beverages We had my in laws over and a couple that are good friends of ours, they all helped with the food. We will have the same to watch more football tonigh. We had a good time, the huskers won, good conversation and the kids had fun playing with grandma and our friend Kathy. The girls just love Kathy and want to go over to her house and pay all the time. Now to start planning for the tailgate party Friday before the high school football party. I find in more recent years it seems so commercial to me that I feel almost silly to participate in the festivities. We'll probably go out for dinner though! 6.
