Never heard of cowboy candy - what is it exactly?

I'm guessing it's candied jalapenos. I found this recipe last year and tried a smaller batch -- I made a 12 oz jar with all the jalapenos I had.... a mix of red and green. https://www.foodiewithfamily.com/candied-jalapenos/

They're the bomb with a hamburger. I just made another 8oz jar this morning. :)

Yes, candied jalapenos ... I canned mine [15 minute water bath] and had lots of the cooked brine left over. It's good for SO MANY things.

eg: I made some dilly beans; rather than blanch the cut up green beans, I put them in the IP for 1 minute. I used my leftover dillpickle liquid [which I have at all times for leg cramps] one cup of it in the bottom of the IP; quick release, draining liquid into a measuring cup using a strainer.

Packed my one pound of beans into a sanitized quart jar ... and added my leftover cowboy beans liquid, and topped it off [not much] with the bean cooking liquid. Letting them sit on the counter overnight to cool ... then will fridge them tomorrow.

Then I gotta wait a couple days (maybe) to try them.

I wonder if I could use these not-Hatch peppers I'm growing. Need to do something with what I didn't want.

Kate, I've never seen a Hatch pepper in real life, but I'd say the recipe should work well for any thick-walled pepper.

Hatch peppers are best IMO if you take the outer skins off. I roast in the oven for 45 minutes, remove from oven and cover with foil. After they cool, the tougher outer layer peels right off.

You can also freeze them by wrapping indiv in waxed paper and layering in a zip bag [after blanching] ... when you take them out of the freezer the outer skin peels right off. I blanch [3 min] the freezer peppers before the waxed paper ...

I love real Hatch peppers.... what they taste like and what you can do with them. I char the skins and slip the skins off; slice them open and take out the seeds; lay flat in a FoodSaver bag; and freeze.

I never thought about pickling them - sweet or savory.

yeah party ... i love to throw a tiny bit of sausage in the mix, maybe even some rice [extender]. They freeze well, and there's nothing like them in the dead of winter ...
