Soy has a bad name. I understand that. It's hard for soy growers to keep non-organic whatsises from contamination their crops. But coconut oil, which has advantages in cool temperatures for texture, has supplanted soy in most vegan cheeses I've seen. I found a soft cheese that's cashew based, though that's not ideal. I need something firmer.
So, there's a website with a bunch of non-coconut cheese listed, but I've lost heart. It's English, I think, and when I find something promising it's in India or something.
Anything in the US? I'd even go with soy. :)
