Comments (12)To me a pasta salad where the pasta absorbs some dressing is much more flavorfull than one fresh dressed. If you toss the pasta in oil it will prevent it from absorbing the sauce....and the flavor...I just make sure I have extra dressing to add at the last. You want a recipe? I have lots....but here's one. Mastoccioli 1 lb mastoccioli cooked al dente drain and cool Pour sauce over and refrigerate over night Sauce 3 cups cider vinegar 1 ½ cups sugar 1 tsp ground pepper 1 tsp salt 1 tsp garlic powder 2 Tbls prepared mustard 1 ½ onions sliced…about 1 ½ cups 1 cuke diced…a big cuke or even 2…I remove the seeds so I need 2 Small jar chopped red pimento Chopped parsley Dry oregano. about2 teaspoons full....add one and taste. "Sharon's Shrimp Salad" ************************ *4 cups cooked pasta (the tiny "O" ring pasta..al dente) * 1/2 lb cooked shrimp-sliced in half lengthways 1 cup thinly sliced celery 1 cup frozen green peas-cooked till just done! 1/2 cup sun dried tomatoes-diced 1/2 cup diced sweet onion 1 small jar of marinated artichoke hearts, cut in chunks salt & pepper to taste grated rind & juice of 1 lemon DRESSING: ********* Equal parts of MARIE'S Blue Cheese Vinagrette (in produce case at the grocery) and Catalina dressing.Blend together & mix into the pasta salad. Comments (7)I am a vegetarian so I make a salad like this to take to parties. I have something to eat and most folks love it. I made it for my DIL's baby shower, I made it big since my younger DD and her BF are also vegetarians~~~we almost did not get any every one swarmed on it. Mine is lots of fresh baby spinach, cheese tortillini, sun dried tomatoes, fresh baby tomatoes if I have any, what ever is your fave oil based salad dressing then sprinkle with Parmesan cheese. I make it early the day let it all blend together this wilts the spinach a bit. In the fall Trader Joe's sells the most yummy pumpkin ravioli, I cook it earlier in the day, chill them. Comments (12)I invited a friend for lunch today and served your Super Easy Pasta salad. It was excellent. We both ate more than we should have. I gave a bit of the salad to my DD and this is all that is left I only used about 8 oz of Fusilli and half of a bag of prewashed baby spinach. Adding the hot past to the spinach really did make it wilt. I made my own pesto with the recipe below, Ingredients: 1 cup fresh basil leaves 2-3 cloves garlic, peeled 3 tablespoons pine nuts 1/3 cup freshly grated Parmesan Kosher salt and freshly ground black pepper, to taste 1/3 cup olive oil Directions: To make the pesto, combine basil, garlic, pine nuts and Parmesan in the bowl of a food processor; season with salt and pepper, to taste. With the motor running, add olive oil in a slow stream until emulsified. Store in an airtight container in the refrigerator for up to 1 week. I made the pesto the night before putting the salad together and it did not turn brown at all. I did not blanch the basil. I didn't actually measure the amount of pesto made but I did use the whole batch on the pasta, spinach and tomato mix. I mixed it with the pasta about 12 hours before serving. It worked out perfect.
