Generally speaking in a home made hotsauce, salt is irrelevanet although in the quantities that Tobasco uses, it also is a preservative. If you don't want to add vinegar at all to your hot sauce, you probably need to ferment using lactic acid fermentation (whole long other discussion, not going into here..:)). This also provides you with the required low acidity to store outside the refrigerator. If you don't mind storing in the fridge and possible having to throw some away if it goes bad you can pretty much do whatever you want and don't have to add any preservative agents We make hot sauce that is vinegar based. We put the chile pods whole or sliced into jars filled with 5% vinegar(kind you buy at store) and store the jars for atleast 6 months. This allows the vinegar to mellow and the chile flavor to infuse. Then drain the vinegar off (but save it), put the softened peppers in the blender/cuisinart and blend until smooth. Add the vinegar back to the mix until you get a consistancy that you like. Add any other flavorings you want (i.e. garlic, cilantro, tomato, onion etc) and mix. Comments (40)To pick only one, probably Menards. I like picking up on their free after rebate items. Plus they have good prices on most everything else too. I also like Walgreens. Surprising variety for a drug store and they get in some good deals occasionally. Other stores that deserve honorable mention: -Target: Has *really* improved in the past 10-15 years. Got to where I wouldn't set foot in there but now I go there often and they're really getting to be a force in the grocery business. A station found them WAY cheaper than Walmart on the variety of items they surveyed and they've surprised me with their prices. Plus I like picking up on their clearance sales. Fleet Farm: Nice place to wander but it bugs me they want your driver license and a signed contract to use the electric carts! Not from me you don't get that there stuff! But they have good durable clothes at reasonable prices, best place around to buy car, boat or mower batteries. K-mart: For certain things. Plus they've cleaned up their act in the past 10 years but have sunk so low that nobody realizes it. Comments (6)We are limited here, too. Hobby Lobby has quite a good selection of supplies (much better than Walmart, and their prices on equipment are about the same). However, the best here is a store that 2 fellow addicts just opened about a month ago. It's called Scrapbook Station and they have the prettiest papers, a huge selection of stickers by all the best manufactuers, a really fancy die-cut machine( for a nominal fee, they will cut your pictures in the shape you want), absolutely gorgeous albums--It's just paradise. Their papers and stickers are about the same price as anywhere else, but other supplies (punches, etc.) are really much higher. I won a free crop during their grand opening week, but I'm not going to use it until school's out--I want to stay all day and get the good out of it! i wish we had a Michael's around here. Comments (10)I'm glad you asked this question because I'm busy updating our house and I'm so out of touch with where to buy things. I have had good experiences with Build.com which has some decor. I've bought some quality lamps on Lampsplus for a good price. Both delivered quickly. I love Room and Board but they have a limited selection- what is nice is their merchandize is well made and often unique to them. Crate and Barrel and CB2 along with West Elm, Restoration Hardware and Pottery Barn are worth checking out but tend to be pricy for the quality. I've been trolling TJ Maxx, Marshalls and their Homegoods store. There are some really beautiful items but it's a really needle in a haystack kind of hunt. If you love heavily theme beach decor - this is the place to shop. Kirklands is very traditional. Etsy brings up too many hits - I get weary sorting through to find something I like.
