A holiday success with cornish hens and a great food blog find

My Dad likes Cornish hens so that's what I made for Christmas dinner. Last time I made them I wasn't that crazy about the results, so while searching for a good recipe, I came across this food blog about Mediterranean cooking that I thought I would share. The hens were delicious, the recipe was a huge success. Great instructions too. I can't wait to try some of her other recipes, I love Mediterranean food! I like how she recommends other dishes to serve with the recipe.

The changes I made was that I made half a recipe because I only made two hens. Plus I had no lemons so I used dried ground lemon peel in the spice rub. If I had to make it again I would make a little more of the spice rub and put it also on the inside of the hens. Oh, and I used a big shallot instead of an onion 'cause I had one, plus not as much garlic as the recipe called for 'cause Dad is sensitive to garlic and I don't like overly garlicky foods, YMMV. I also used less chicken broth, just enough to deglaze the pan. Browned the chicken in a dutch oven and then baked it in the oven in the same pot, covered. Took cover off the last 15 to brown skin. There was plenty of juice for basting but I forgot that part so only basted it once. It still came out fab.
