Steam Humidifier Fills and Times-out

My Autoflo S2000 steam humidifier fills for 3-5 minutes, all the while draining via the overflow hose. Then it shuts off with a WATER LED. The manual indicates that WATER means it took too long to fill.

I'm guessing I need to replace (or maybe just clean) the water probe. Thoughts or tips?

(My biggest fears are that the saddle valve will leak after I touch it, or that I'll have a tough time getting the humidifier back into the duct and re-taped.)

While I have the unit out of the duct, I'll probably replace the (very old) anode. Anything to watch for there? (Biggest concern here is that the bolt will be so mineralized that I'll not be able to remove it.)
