Eggs Benedict for a small-ish crowd

My sister and I are having our immediate family gathering at brunch on Christmas Eve this year. We are thinking of having Eggs Benedict. It is our favorite ”fancy food” brunch. The sides will probably be fruit and gruyere grits, both of which can be done the day before. There will be 9 adults. (The 3 pre-schoolers will probably get fruit and grits with scrambled eggs and toast)


I’m trying to figure out an orderly way to get everyone served at the same time, or close to the same time. We’ll have 4 gas burners, 2 ovens and a Breville toaster oven available. I can bring 2 electric warming trays. Because none of us have ever learned to correctly poach an egg, they will be poached in pans with wells.


Here are the issues that I see:


1. How to keep the Hollandaise warm for an hour? I know Thermos are often suggested for this but there isn’t a Thermos among the 3 households involved. DD has a bunch of wide mouth canning jars. Would it work to put them in a warm water bath?


2. How to toast and hold the English muffin halves and keep them relatively crisp?


3. How to warm and hold the canadian bacon?


4. How to poach 18 eggs, 9 at a time, and hold them for about 20 minutes. Can they be held in a warm water bath in a slow cooker?


Are there small appliances I can buy/rent that will make this a lot more efficient (short of hiring a private chef)?
