Make lemonade. What about unripe pumpkins?


I grew Musque de Provence pumpkins this year. A few got ripe. Quite a few didn’t not get ripe at all - and were left out for the wildlife who have so far not been interested.


Then there were a few questionably ripe ones. I noticed the last sad orphan while tidying up my porch yesterday (and avoiding the itchy task of banking my house with haybales). I decided to make a puree to freeze. After I processed it I decided it wasn’t fully ripe - not inedible just not quite there - and I have a bunch. I think I will make a pumpkin bread which had plenty of flavor from spices and sugar. Any other suggestions? I still have this other one to cut up at some point.


While I am not enthused with the flavor my dog certainly liked a spoonful on his kibble. I do usually have some frozen pumpkin/squash in my freezer for canine bellyaches. I hadn’t really thought about it as a regular addition to meals.


PS - Odd note I was given seeds and a plant by a friend. All of hers came out pinkish tan and all of mine dark black green finally turning orange in spots. Soil or light differences between our gardens. Or both.
