Comments (3)I agree completely with all that Carol said about the risks associated with your recipe. As is, it is not safe to can. At the very least you would have to eliminate the oil, switch to dried herbs only, and add some form of acid. I'm confused as to why a whole tomato is ok to can but liquid tomato is not. Or is it? Plain whole tomatoes are safe to can because acid, in the form of citric acid, bottled lemon juice or lime juice, or vinegar, is added to them to reduce the pH into the safe acidic level range. Your recipe contains no acids and it would require a great deal more than plain tomatoes do because of all the added low-acid ingredients - the garlic and fresh herbs. Comments (6)Yuck....canned tomato soup has always been my least favorite! There is a restaurant near me that serves the best tomato soup I have ever had. They won't share their recipe so I have been trying to duplicate it on my own. Here is my version....it's almost as good as theirs! I'll keep tweaking until I get there! Tomato Basil Soup (Inspired by CarolâÂÂs Restaurant, Blaine MN) I Tsp olive Oil 1 medium onion, chopped 1 28oz can Muir Glen Whole peeled tomatoes 1 28oz can Muir Glen Fire Roasted Tomatoes with Basil 1/2 tsp kosher salt Pepper 2 tsp sugar 1-1/2 c chicken stock 2 T tomato paste 1/4 c chopped fresh basil 1/3 c fresh grated parmesan 2T dry red wine Heat olive oil in large dutch oven, saute onion 1 minute or until tender. With fingers, squish whole tomatoes until chunky. Add both cans of tomatoes to onions, bring to a simmer. Add salt, pepper, sugar, chicken stock and tomato paste. Simmer for 7-10 minutes. Add basil, parmesan and wine, cook until heated through. I don't really care for cream in my tomato soup, but this one is an exception. The recipe was developed by a local chef for an annual fund-raising dinner that we hosted when I was in the Hospitality Management program in college. It's delish! Tomato Bisque with Tortellini 1-1/2c diced tomatoes 1-1/2c tomato sauce 3/4c bloody mary mix 1-1/2tsp fresh basil 1/4tsp italian seasoning 2c heavy cream 1/4c chicken base 1/4tsp dried thyme 1/4tsp white pepper 1T sugar 1/4c grated parmesan cheese 1/2lb tortellini Combine all ingredients except tortellini and cheese in stock pot. Bring to low boil then remove from heat and add parmesan. Blend with stick blender or in food processor until smooth. Return to pot and simmer. Meanwhile cook tortellini in boiling water 5-7 minutes or until tender, add to soup and serve, garnish with parsley flakes. Take cheapest chicken pieces ([probably legs) OR any other meat you get for good price OR turkey/chicken/pork/beef or any other meat bones which you roast till golden in the oven OR any combination of vegetable OR any combination of any above.........cook it in a big pot till meat falls off the bone OR bones come apart easily OR vegetables are soft (or all above). Add some spices OR herbs (to your taste), a bit of salt (or not), cover with the lid and put out on the balcony to cool till fat (except for vegetable soup) is getting white and firm on the top of the soup. Take it back into kitchen, remove fat and get rid of it. Take out all items which are in the broth, sort it out, clean bones of meat, chopp the meat (if you have lots of meat you can use some for chicken/meat salad). Keep chopped meat/vegetables on plate and think of how much same kind of soup you will need. If you have too much, divide it into smaller pots and divide chopped items to make different soups. Make your smaller pots boil, and add some meat and rice to one, some meat and noodles to other, add some chopped raw potato to another pot and add some vegetables too. One with potato you can mix into cream soup without cream. Except for potato soup, all other soups freeze well so you can make different kinds of home made soups at the same time. Do not make a science out of it as you do not need any special recipes for no fat/no salt soup. You can look at any cook-book web site, find soup recipes - and there must be thousands. Comments (9)I like to occaasionally buy a rotisseri chicken from the grocery. I remove all the meat from the bones and set aside; then put a bunch of veggies, all the bones and fat back in the pot, and let it simmer until I want to have dinner. I remove all the bones and pieces of fat, only then adding in the meat to heat only. I love chicken soup and this way is fast too. The roasted meat seems to add a new dimension to the broth.
