How often do you rethink your recipes?

When I was young and living where ingredients availability was variable, I learned to improvise. A friend showed me how to make a quick pasta sauce out of a can of tomato paste and an onion. Plus other stuff, of course, but whatever one had. It really wasn't that good, but it was fast and didn't require shopping. When I returned to California, I returned to making really good ragout as taught by our Italian family friend. Big kettles of it, freezing large containers, like stock. It was used in my much loved lasagna too.

Came a day I was just desperate to clear out the produce. Some went in the crock pot with the chuck. Some became a kind of salsa. Some became tomato sauce. I roasted half a dozen large heirloom tomatoes, a couple of eggplants, shallots and onions, and put them in a pot with carrots and some other stuff, some of the hot salsa (with tomatillos in it), herbs, tomato puree and paste, cooking liquid from chicken and beef, wine, and some other stuff. It's very tomato-y and very tasty. Sweeter than usual, but good. And I had cheese I wanted to use up, and turkey sausage and ground turkey, so I made a lasagna. Different than usual. Thin ricotta layer, lots of grated cheeses, slices of provolone. Lots of herbs.

It is SO good! Not better than the usual, but as good. Different. And exciting because it's new, even though still tomato, sausage, cheese flavor (I also make pumpkin lasagna, veggie/spinach lasagna, mushroom lasagna and barbecue chicken lasagna, but those are very different) So now I have to figure out how to repeat it!! OY!!

Now I'm wondering what else I should try making "wrong"....
