all white interior: same white, different finish vs slightly different

Bought an expanded 1970’s cape style home and in process of modernizing interior. Planning to paint walls and trim white; floors will stay oak wood. Original plan was to pick one white, but differ finish between wall and trim. But now looking at samples, wondering if we might get a different feel per room if we chose:

  1. use same white color on all walls , but vary finish per room (e.g. high gloss in kitchen, matte in living room)
  2. use same finish on all walls, but vary white color per room (e.g Decorator white in kitchen, Simply White in living room)
    Anyone have experience and/or professional thoughts with all white walls/ trim and either of those scenarios?
