A recipe fail, please critque

A food critic posted a Chili Sauce recipe of a local chef. He made a few containers of it, and it's the bomb.

It's hot and spicy......the recipe calls for 100gr of chili flakes which is insane, so the author (and me) backed it off to 20gr (couple of tsp)

Mine didn't cook up nice and smooth like a sauce. The sugar didn't dissolve in the oil and was sludge. When it cooled it was hard lumps.

I probably won't bother again, I was certainly intrigued and the author loved the sauce. But I also have a new container of gochujang in the cupboard that I haven't used, so that will do.

What do you think happened? It wasn't burned at all, but is it a victim of cooking on too high of heat?
