Just a follow up: The fixture (ORB flushmount) has been installed and wow, it puts out a lot of light. Perhaps because our kitchen is small and the cabs are white, it's like a surgical suite in there now--I can see so much that I couldn't see before, I want to hire a housecleaner! The fluorescent box was easily removed and there were only two nickel-sized holes in the ceiling that the painter had to repair. If anything, I am sad that I wasted several years living with the tube lights because I thought it would be a bear of a fix and a small fixture would not provide enough light. The recessed lights we had installed seven years ago are totally unnecessary now.

personally, I'd do canless led lights. they are cheap, efficient, you can change the range of color from soft white to neutral to cool depending on your taste, and they fit into any space over an 1 1/2 inches wide. they also have their own boxes so no worry about sparks. they come in a variety of sizes, I'd say to light the shelves you want with recessed led light strips so they light the countertop as well as what's on the shelves. this is achieved by cutting channels under the shelves so the strips aren't seen but you still have light. use 2" or accent led canless lights for above and a few over the general room. this will also clear up head space and make the space appear taller and noone has to worry about hitting their head.

Pendant #2 in the first lineup is fantastic! The white cone and very clean simple brass hardware is as good as it gets for modern/minimal. Love the sputnik fixture too, but have you looked at a similar fixture in person? I've found I can't handle the glare of clear-glass fixtures. Obviously some people can, but make sure you've tested that before you order the fixture. There are very similar chandeliers with frosted shades, if you find the clear glass to glaring.

Doubt I would like it at night, lit. I would think I was seeing spots. Some people shop for the shadows a fixture will cast. I prefer not to add to the visual clutter especially at night, now that my eyes are older at weaker.
