Granite 4-inch Backspash VS. Full Backsplash Coveredge?

We bought a spec home last October. We didn't get to choose any finishes or colors.
The kitchen has a standard 4-inch granite "lip" (backsplash) that matches the granite counter. My wife hates it, and wants to have someone install a full tile backsplash.
We've heard it might be a mistake if we remove the 4-inch granite "lip", because the counter-installer might have made a mistake and used the granite "lip" to cover up any imperfections during install.
What is my recourse if we hire the tile installer to pop out the granite "lip" to install a full backsplash, and we find out the counter is chipped or damaged underneath the "lip?" Would I have to hire someone to replace the whole countertop?
Maybe I should just leave the 4-inch granite "lip" alone and try to talk my wife into accepting the backsplash as it is?
