Uneven and multi color grout

Hi, so now I'm dealing with the worst grout application I have ever seen. Our contractor's tile guy used the polyblend linen grout that he mixed himself and did the grouting on the kitchen floor. It's completely uneven in level and each groove of the 48 x 24 inch floor tile has 2-3 different depths and shades of grout. When he started doing it, I told him that he should get the cement out in between tiles before applying the grout. In that process, he chipped one of my beautiful porcelain tile. Either he mixed too much water or I don't know what the error was, but my kitchen floor is ruined. Now after complaining too much, contractor agreed to redo it but they are planning to use the powder one again and I'm sure they will not mix it up right or not follow the right directions and ruin it again. Would getting a premixed grout make a difference? So frustrating. No idea how to solve this problem. Any help would be appreciated
