Comments (120)As long as it's not Siberian Elm (which where I am is surprisingly common). SE has a messy, weepy look and often bleeds down the trunk. Highly susceptible to wind and ice damage. Smaller leaves than native elms. Of course it's highly resistant to the Elm diseases because it evolved along side them. Much like the sad situation with the American Chestnut. Steven American, Slippery, and Cork Elm are native but susceptible to Dutch Elm Disease and phloem necrosis. American Elms are large, grand, vase shaped shade trees at their best. Sadly, very few mature, old trees remain due to the foreign pestilence they face. I'll have to take photos of two I know of in "my town". Comments (104)Sleevendog, I can never get roasted garbanzos right. They are either so hard you'll break your teeth, or they are too mushy in the middle, I can't seem to hit a middle ground. (sigh) And, like you, anything I find that has managed to evade my freezer raids and has gotten old/freezer burned, just becomes dog food. Molly is always happy to help out, LOL. Lynda, that bread looks amazing, nice and crispy. I love the chewy crusts. Your salmon looks really good too, is that a butter sauce? Jasdip, what are you going to do with all those chicken legs? Neely, thanks for the explanation on the sweet potato fries. I like your blue and white plates, I notice them whenever you use them. Here I did cook for Mother, I made butternut squash soup, a Panera Bread copycat recipe. I don't know whether she liked it or not. I'm sure she'll let me know. (grin) I also made her some goulash, but I didn't take a picture. This is the soup all packaged up for her fridge: Some pumpkin muffins: I made some ahi tuna for Elery and I, along with some roasted asparagus. The tuna was a bit overdone, I took a phone call and it went a few minutes longer than I anticipated. And I've been organizing the pantry. I had baskets, but things got "lost" in the bottom, and I couldn't see what was in them. I replaced them all with plastic boxes that I could see through. Since I started cooking for Mother I have things l didn't usually buy, like seasoning packets and canned soup, so now I can keep them organized and actually find them! I had that first cataract surgery yesterday, and so Elery made himself some supper while I slept off the effects of the sedatives. No pictures, LOL. Today my very kind neighbor from the B&B brought some lentil vegetable soup and apricot bread. We had that for supper. I took a page from Sleevendog's book and made a frittata to go with it, used up an Anaheim pepper and one of those red cippolini onions I got from Misfits, as well as a handful of button mushrooms that needed to be used. Topped it with my homecanned salsa... We haven't tried the bread yet, maybe breakfast tomorrow morning. And my Misfits box came, so more vegetables to use up! The golden beets were especially nice this time, and the tops are fresh enough to eat, so they'll be going into something in the next couple of days, they won't last much longer than that. Nice big lemons too and Elery was happy there was zucchini, he likes it sliced thinly, sauteed and topped with eggs for his breakfast. Ihad one of the ambrosia Gold apples this evening and it was crisp and extremely sweet, definitely a "dessert" kind of apple. Comments (104)Oh dear, I'm so far behind I'll never catch up! Neely, that chocolate cake looks good and I love Nigella. She's not afraid to go on TV eating a cold pork chop in her pajamas, LOL, I like that! Shambo, I never thought of adding a sauce to the cabbage roll casserole, I'll try to remember that Lynda, you do a better job on hot dog buns than I do too, mine are never long enough and always too wide. And I've never heard of anyone making wine from guavas, it's a very pretty color. Sleevendog, you lost a chicken, LOL. Usually they're alive when that happens to me! All the frittatas look good too, I'm never that creative. Jasdip, I had to laugh, thinking of you and your "exercise class" out in the parking lot, serving as entertainment. You should get someone to film it, you could have your own YouTube exercise channel! OK, so what's for dinner? I made a version of those peanut butter noodles they serve at Asian restaurants, but I had a box of soy spaghetti in the pantry, so I used that. It was not as bad as I expected and Elery actually liked it a lot. I roasted a butternut squash to go with it, I still have a lot of them in the store room. In my quest to make freezer room, I pulled out a bag of chicken legs from the chickens we raised last year. They were HUGE, so I put 4 of them in the air fryer and the other 4 became chicken noodle soup. I mashed some potatoes and celeriac, roasted parsnips and beets and steamed some brussels sprouts. The celeriac, beets and sprouts were all courtesy of Misfits. I decided to try a new dish, Pasta a ceci. I was not a fan and even Elery wasn't all that crazy about it. The recipe came from Serious Eats. One day we spent fixing fence getting ready to put the cattle out onto pasture, so I just scrambled some eggs and made that salad with peas and peanuts that I like. We stuffed the eggs into flour tortillas and topped them with home canned peach/mango salsa: Time to cook for Mother, so I made some potato cheese soup which she likes a lot, and some split pea soup, which she likes sometimes. Bread pudding to use up some eggs: Still trying to make freezer room, I put a piece of pork butt in the small Nesco roaster, and baked the purple sweet potatoes I got from Misfits. We had the rest of the pea salad. I also took 3 bags of chicken wings out of the freezer and started a big batch of stock, no one in my family will eat chicken wings. I don't like chicken skin, so there's not much left after skinning a chicken wing, LOL. I'll can the stock tomorrow, after it simmers all night in the big Nesco. While digging for the chicken wings, I found some bags of raspberries from 2019 in the freezer and made jelly. I used to make jam, but the seeds get under Mother's partial plate and so she only wants seedless now. Seven of the 8 ounce jars and one 4 ounce jar are cooling on the counter, Mother likes it on corn muffins. At least she does today, who knows about tomorrow. Comments (99)Tri-tip was very tender. Phew. Bean/grain salad. Smoked tomatillo, hatch chili salsa from last Fall. Avocado, fresh tomato pico, lettuce for wraps....all served at the table so no plating pics. Hav ing similar tonight. Easy salads already prepped. Made another fresh slaw this morning for variety. Extreme heat wave should break tomorrow . Jas. Pop has been stressed about old age. Mobility. Eyes, hearing. And sure, the covid stress. When we visit i cook for them, DH handles construction chores. I fill their freezer. We have always done that. My older siblings do not cook. They are all retired and have been for a while. My oldest sister is vegan whole food in a blender. She eats for herself and does not help much. My sister that lives nearby can't boil water. My brother and his wife are clueless about what a visit entails. Mother cannot cook for 5-6 people. When they visit it is stressful. Whe we visited after vaccinations, he was over the moon. (we are still working). Just surprised why a box of treats, good treats, is a downer. I think it is distance frustrations. He would like to see us more often. 93 and 92 is old. Pop is just frustrated. Mother is a spitfire in mobility. Adorable and enthusiastic but early dementia. Never expected Ba-Humbug from Pop. 50 bucks once a month is priceless. We are letting him know that mother will be taken care of at home. He thinks he will die before her. They have the investment money or i will pay for it. He has plenty medical adivce. He really could use some elder care emotional support. If i had ten more lives in my 20 already, i would love to help the elderly...just a visit and a voice. An ear....See Moreannie1992
