Blueberry Yogurt Popsicles - 2 photos and a recipe!

I've tried to post this multiple times without success. Either this time it will post, or somehow I'll end up flooding the forum with the post.

I made a very small batch of these, the yield was 4 (but only 3 are pictured), and they came out pretty good, but I'm still searching for how to make them more creamy while still keeping them a popsicle (maybe I'm just looking for ICE CREAM! LOL). I want them to be super low-or-no sugar, & don't want to add alcohol. One of my friends suggested guar gum but I've never used that.

The recipe is based on one found at Sally's Baking Addiction.

These would be really good and refreshing on a stinking hot day!

Here's what I did, including my notes.

2 C blueberries (I used the ones I had in the freezer & defrosted them a bit on the counter)

1/4 tsp grated fresh ginger (I'll have to add more next time)

1 tsp honey

1 T lemon juice (probably could have added more)

1 T water

1 tsp cornstarch

1 Greek yogurt, 5.3 oz container (cherry on the bottom because that's what I had)

Heat blueberries, ginger, honey, lemon juice and water gently in a pan on the stove.

When the blueberries are getting a bit juicy, add 1 tsp cornstarch & mix so the blueberry juice gets thicker.

Continue to heat and mix on low for about a minute. Remove from heat.

Cool the mixture a bit, then put in food processor and pulse 5 times.

Pour into a bowl.

Stir in the Greek yogurt and pour into popsicle molds & freeze.

(I froze these overnight)
