I think your choices lend nicely to a Transitional look. That's when you take traditional looking products but modernize them for today's style. A gray/white kitchen would be the modern part. A 'natural' wood look product could add the 'traditional' part. Adding a wood-tone to a modernized kitchen is what offers the 'Transitional' feel to a space. And the light yellow/gold tones of wood add SUNLIGHT and WARMTH from the floor. Yep. The flooring will bounce a little bit of warm lighting (ahem...sunlight is yellow) into the space. That snick of yellow adds cheerfulness to an otherwise dull gray/black/white monochromatic world. If you are in a climate that sees all 4 seasons or have plenty of cloudy/gray days (aka Seattle and Vancouver) then a cheerful floor colour REALLY helps with mental health (nope....not kidding on that one).

I really love the way it looks! I am waiting on Aurora oak for the 1st floor of my lake house where the bedrooms are. Mine was backordered for a few weeks and is not going in until the end of Feb. I didn't notice the mismatch of texture and print and i don't see it in your photos. i had to go with the slightly thinner product rather than the wildly popular Calypso or Cairo oak as it it being installed over burgundy tile. Can't wait for my floors and your is the !st I'm seeing of the Aurora Oak that is not a company pic. To me it is the perfect light color, not too warm, not too washed out and not too grey. I hope the mismatch is not noticeable!

LVP will be warmer underfoot, especially if you choose one with a WPC. It will also be softer underfoot, and provide more sound dampening than porcelain tile. If you want a more durable LVP choose one with a SPC. Some people choose LVP instead of tile because they don't have to worry about grout and it getting stained. You have likely already decided by now, but I think both of your options in the picture look beautiful. All 3 have a realistic look to them.

Kristin Windhorst, if you will look at a thread here on Houzz, Adura Max vs Cortec, you will find many photos of actual installs of SuperCore. I had SuperCore Krypton installed in a home I sold in 2020 and it turned out great. I had moved before the install, but do know that it’s easy upkeep. My new construction home has SuperCore Elkhorn floors, and I love them. The planks are 7” wide and 60” long. My flooring has a micro bevel that I can’t even see. Both of my choices would be too rustic for you, but I love them. There are many choices of color and style in SuperCore. Oak Natural is a pretty hardwood look with little contrast between planks, Gunstock is a darker choice, and there are many others. WeShipFloors.com has a great website with good info on SuperCore.
