Don’t Kiss Me!! I am not Irish! Keep Your Distance!!!


Since I am not Irish, I can be free to play with my St. Pat’s dish.


Some of you may know my bad habit of trying different cooking ideas. Agmss15 on another thread talks about making seitan and was wondering what to do with the excess starch water. He/she made rice noodles at the end. That gave me an idea.


In the making of my corned beef dinner, I used sous vide (72 hours at 135F) method. I the past, I always didn’t know what to do with the flavorful juice left in the bag.


I decided to make rice noodles and used the corned beef juice instead of water. I totally dried the noodles using my dehydrator then deep fried them. The noodles puffed up in about 3 seconds in hot oil like popped corn. Not much oil was used.


I used the noodles as part of the corned beef dish. Very nice tasty puffed noodles which tasted like corned beef.


I will do this again next year.
